Italian Tortellini Soup
1 tablespoon olive oil
1 onion, chopped
1 tablespoon minced garlic
4 cups vegetable broth or water
1 package cheese tortellini (8 ounces)
1 pint or can of diced tomatoes
1 package frozen spinach
1 teaspoon Italian seasoning
salt to taste
This recipe can be doubled, tripled, etc.
Saute the onion and garlic in the olive oil till the onion is tender. Add the broth or water and bring to a boil. You may need more water. Add the tortellini and reduce the heat, let it simmer till done. Stir in the tomatoes, spinach, and Italian seasoning and salt if desired. As soon as the spinach is warmed it is ready to serve.
I love this quick easy soup on cold nights when we are running late or need a quick meal.
